Farmer’s Market Salad

Mixed greens, baby spinach, roasted asparagus, squash, egg, Portobello mushrooms, Vidalia onions and tomatoes, served with cornbread croutons, Ken’s Essentials Ranch Dressing and herb roasted chicken.

3 fl-oz Ken's Essentials Deluxe Ranch Dressing
6oz Chicken Breast, Skin On, Herb Roasted
2c Mixed Baby Greens
2c Baby Spinach
4ea Asparagus Spears, Roasted, Halved
½ c Zucchini, Sliced, Grilled
½ c Summer Squash, Sliced, Grilled
2ea Egg, Hard Cooked, Halved
½ c Portobello Mushroom, Grilled, Sliced
¼ c Vidalia Onion, Sliced, Grilled
2ea Roma Tomatoes, Halved, Roasted
½ c Corn Bread Croutons

Directions

Using a large mixing bowl, gently toss the following ingredients; mixed baby greens, baby spinach, asparagus, zucchini, summer squash, Portobello mushrooms, and Vidalia onion. Place on a decorative plate or bowl and top with the roasted chicken, egg, roasted tomatoes, and corn bread croutons. Serve with a side of Ken’s Essentials Ranch Dressing. Serve immediately.
